Vegan Stir Fry

Prep/cook time: 25-30 minutes


– 1 package of 100% Whole Wheat pasta (stay away from refined grains)
– Gourmet Dragon Mushrooms (or shittake mushrooms)
– Dino Kale from the garden (about 1/2 cup, chopped)
– 1 Yellow Zucchini from the garden (about 1 1/2 – 2 cups sliced and halved)
– 2 Betterboy Tomatoes from the garden (sliced and quartered)
– 4 to 5 Jalapenos from the garden (sliced)
– Garbanzo beans (1 cup or 1 can)
– Olive oil (2 tbsp)
– 3 Garlic cloves
– 1 1/2 tbsp Tuscan Seasoning salt (or garlic seasoning salt)
– 2 tbsp Rosemary Flecks
– 1 1/2 tbsp Ground black pepper

Note: Season to your taste, I like to experiment with different herbs and spices and it usually turns out amazing.

Bowl pasta until cooked
Mix all other ingredients in a pan until cooked (usually about 12-15 minutes)
Combine all ingredients into a bowl and enjoy!

It was so good, that even my younger brother (who claims to dislike all healthy foods) enjoyed every bite and even came back for seconds. The seconds & thirds you don’t have to feel guilty about.DSC_0406
