My days are starting to feel like they’re getting shorter, so I’m making a lot of quick and easy recipes that don’t call for a lot of ingredients, skill, or patience. Which is great because this is what most people enjoy!
Now, for the sauce, I kept it simple:
2 c. of Organic Mariana with mushrooms from Trader Joe’s, sliced shiitake mushrooms, diced 1 lg bell pepper and 3/4 c. of red onion, stir fried it for maybe 5 minutes, threw it in with the mariana.
Served hot topped with fresh basil sliced confetti style.
It only took about 15-20 minutes, which was exactly what I was hoping for because I was slammed with homework that I had to get done that night.
