Every time I cook, I am overwhelmed with left overs. I’m always running out of glassware, freezer, and fridge space. There’s a plus side to left overs though, especially when it’s something very versatile that you can find other ways to incorporate them into your meals than just having the same meal every day.
I remembered I had some Smart Dogs in the fridge, and decided to whip up a chili cheese hot dog for my brother and I with a side of fries seasoned with garlic salt and rosemary flecks.
It was too simple and super quick! Boiled the dogs till they were done, and threw them in a frying pan for a few minutes (oil free). Put the french fries in the oven for about 12-15 minutes. Warmed up the left over chili. Toasted two slices of Dave’s Killer Bread Blues Bread. Covered the dogs with chili and top it off with some Daiya cheddar shreds!!
It truly tasted so fresh and wasn’t full or bloated afterwards like a meat filled chili cheese dog does. And the best part, you can have two, or three, and be guilt-free!! You could even skip the dogs, and just make chili cheese fries!! This meal is perfect if you’re a vegan student who’s always busy but still wants to have their meals packed with protein, fiber, and nutrients.
