Vegan Granola Bars!!

I’ve always wanted to make my own granola bars, but would always shy away because I thought they’d be too difficult, wouldn’t taste right, or come out the way they’re suppose to. But, today, I just decided to give it a shot. So I looked up over 20 recipes, nothing really peeked my interest enough to go for it. All the recipes kept saying how customization they were and how you could literally substitute any ingredient for something similar or just completely cut it out the mixture. And so is this recipe, changed whatever you want and make it for YOUR taste buds and you’ll love the outcome.

Here’s my ingredients:

– 1-2 over ripe bananas
– 1 c. rolled oat flour
– 1/2 c. granola
– 1/2 c. cacao nibs
– 1/4-1/2 blackberry blossom honey
– 1/2 c. creamy peanut butter (you can use crunchy)
– 1/3 c. coconut shavings
– 1 1/2-2 tbsp cacao powder
– 1/3 c. crushed walnuts
– 1 tsp vanilla extract
– 1/4 tsp fine grain sea salt

Preheat your oven to 350F
Using an 8×8 pan, line with tin foil or lightly oil it to avoid sticking
Mix all ingredients in a bowl
Once fully mixed, fill pan and press firmly down
Bake for 20-25 minutes

**If it’s not as crunchy as you like, add more oat flour to thicken up the mixture or store in the freezer afterwards.
